Making some immune boosting snacks for the kiddos and me.
This fluctuating weather has us a bit congested but not for long, this deliciousness is packed with vitamin C and all the good stuff. Like, high-quality protein and healthy fats from the almonds; along with magnesium, minerals and antioxidants. Honey is know for its anti-bacterial properties and to boost the overall immune system, which is what you need during the cold winter months, or when you first start feeling under the weather. Finally, lemon juice is a rich source of vitamin C and helps fight infections in the body. It’s been known for centuries for its ability to fight the common cold and reduce inflammation as it flushes out the toxins. Plus, I add this extra ingredient not only for its wide range of health benefits, but to amp up the taste and consistency.
Then, this immune boosting snacks turns into an ooey-gooey goodness of “caramel candy”. Recipe below..
Ingredients:
2-3 tsp almond butter
1 tsp honey
Juice from half or whole lemon
1 scoop of collagen peptides
Instructions:
In a small bowl, scoop two heaping tsp of almond butter, and add the honey, collagen peptides and lemon juice, one at a time, stirring thoroughly.
When adding the lemon juice, first start with half of the lemon, and then add more to your liking. Obviously, lemon size and juiciness will play a role in the amount here. The more lemony you can handle, the higher dose of immune boosting properties you are squeezing in (see what I did there?!) 🙂 You can adjust the amount of honey/almond butter, as you increase the liquid to your desired taste.
Top it off with walnuts, ground flax seed and chia seed, or other super-food of choice, or Enjoy as initially created it, without toppings, for a no-fuss, healthy treat for the kiddos.
