Chia pudding chilling in the fridge, with a blended twist.
How do you make yours?
The secret ingredient here is cashews: for extra creamy texture and an added nutritional value.
Did you know that cashews help reduce depression? While not oft talked about among the nuts, they are highly potent in increasing production of serotonin, the happy hormone, and one of the few nuts linked to decreasing anxiety and stress levels, among other health benefits.
Oddly enough, my little girl was asking for them tonight, but couldn’t remember their name, so her request was for “those nuts that look like a “smiley face”. How fitting, isn’t it?!!
Here is the recipe:
1 cup raw, unsalted cashews
3 Ā½ cups nut based milk (or pure water)
Ā¼ cup organic maple syrup
1 tbsp good-quality vanilla extract
Pinch sea salt
3/4 cup whole chia seeds
Place all ingredients in a high speed blender and blend until smooth and creamy
Pour into glass jars, lid and chill in the fridge for at least 2 hours or overnight. Enjoy with berries or superfood of your choice! š
Note: If you like the texture of whole chia seeds, you can omit them in the blender and simply stir them in a bowl before transferring to the glass containers in the fridge. But if chia seeds between your teeth isn’t your thing, try the version above, I think you’ll love. Kids approved too!Ā š
